Baker’s Note:
This cookie cake recipe is intentionally developed with a higher fat ratio to achieve that signature soft, chewy mall-style texture. The bakery that uses this recipe keeps their cookie cakes chilled after baking, allowing them to firm up and set beautifully after a rest of about 1½ to 2 hours (longer if you prefer a cold, sliceable cookie cake).

I’ve also tested this recipe many times at home for same-day baking with no chill, and it works great as long as you’re baking with a reliable oven thermometer and can read visual doneness cues.

If the center looks noticeably wet or greasy, it should not be pulled yet, even if that means baking a couple minutes past the recommended window. The edges should be set and lightly golden, and the center should appear just underbaked — it will continue to set as it cools.
