Many of you have already made my Bakery S'mores Cookie from the Bakeshop Collection. That recipe was originally developed as a standalone gourmet bakery cookie. It was never intended to become a master cookie base and it was not originally built as a cookie system. This is now a system that comes from that recipe.

In addition to the recipes themselves, the file includes extensive educational notes covering ingredient function, flour selection, butter choices, dough handling, baking variables, storage, troubleshooting, and creating your own custom variations.

THE COOKIE STYLE

These cookies were intentionally designed to sit between several popular cookie styles.

They are not thin cookies that spread across the entire pan. Not ultra-thick Levain-style cookies. Not cakey cookies, and not muffin-like cookies. Not extremely underbaked cookies.

Instead, they bake into moderately thick bakery-style cookies with crisp edges, soft centers, balanced chew, controlled spread, lightly wrinkled tops, and bakery display case appearance. The texture is built around contrast.

The edges develop a delicate crispness while the center remains soft, rich, and tender.

If your preference is extremely thick cookies, very thin cookies, heavily underbaked cookies, or highly specialized cookie styles, one of my other cookie collections may be a better fit.

THE ORIGINAL BAKERY S'MORES COOKIE

This collection originated from the same development path that created the original Bakery S'mores Cookie, but these recipes are not identical copies with the inclusions removed.

The S'mores Cookie was developed specifically around marshmallow, graham, and chocolate components. These formulas were adjusted and rebuilt to perform as their own individual cookie styles while maintaining the same overall bakery texture philosophy.

As a result, if you've made the Bakery S'mores Cookie before, you should expect similarities in approach but not identical results.

This collection is intended to function as both a recipe collection and a bakery-style cookie framework.

The recipes work exceptionally well as written, but they also provide a foundation for creating your own future variations using the principles explained throughout the file.
